I went to the Baltimore Farmers Market on Sunday. I hit the jackpot!! I got over a peck of apples for $7…so, I have a challenge on my hand…what to do with a huge bag of apples???
So, the first thing I thought of is Apple Cake. So, here is the recipe that I made up. It is a revised Apple Cake form another website. I just could not justify the 2 cups sugar, 1 cup oil, changed flour to 1/2 whole wheat, and added pecans instead of walnuts…so, here is my version:
Apple Cake
6 apples
1 tablespoon cinnamon
6 tablespoons sugar
1 1/2 cups flour and 1 1/2 cup whole wheat flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup vegetable oil
1 cups sugar
1/4 cup orange juice plus 1/2 cup organic milk
2 1/2 teaspoons vanilla
4 eggs
1 cup pecans, chopped (optional)
Preheat oven to 350 degrees. Grease a bundt cake pan. Peel, core and chop apples into chunks. Toss with cinnamon, pecans and sugar and set aside.
Stir together flours, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, orange juice, milk, sugar and vanilla. Mix wet ingredients into the dry ones, then add eggs, one at a time. Scrape down the bowl to ensure all ingredients are incorporated.
Pour half of batter into prepared pan. Spread half of apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top. Bake for about 1 hour, or until a tester comes out clean. Yummy and lower fat than the original!!!
